Cucumber: Any cucumber will work, but the absolute best variety to use in this cucumber martini is an English cucumber. They're also known as "hot house" or "seedless cucumbers", which is a bit of a misnomer given they do contain seeds. Their seeds, however, are much smaller than regular cucumbers, which makes for a smoother purée. They also have little to no bitterness. This Summer has been the Summer of cucumbers, as apparently it grew really well. Not in our garden, though, but we did get it enough from the parents, to have it to spare.This traditional Mexican drink is also called Agua Fresca de Pepino or Cucumber Agua Fresca (aka Cucumber Fresh Water). It’s made by blending the cucumbers with water and adding just a touch of sweetener. In Mexico, it’s a popular drink served by street vendors! Strain it with a fine mesh strainer!This removes any sediment that might float on the top of the surface of the lemonade. Experiment with other herbs. Replace the mint with basil for more herbal notes. You can also steep your simple syrup with some dried lavender and mix it into the cucumber water. Add chopped cucumber to a blender with simple syrup and lime juice and blend until smooth. Strain the mixture through a sieve to remove any cucumber pieces. Fresh Cucumbers: Cucumbers are made up of about 96% water so when you blend them up they tend to liquefy significantly. I leave the peel intact to get all the extra nutrients found in it but you can peel them if you prefer. Use any kind of cucumbers including the Persian cucumber or a long hot house cucumber but if you ask me, plain old cucumbers are the juiciest.
