A recent study has established that when you put Gunpowder Green Tea vs Sencha, the former appears to have a higher antioxidant capacity. Gunpowder tea is exported to North Africa where it is used in the preparation of traditional Moroccan (North African) mint tea, made by adding mint and sugar or honey to gunpowder tea while brewing. The name may also have arisen from the fact that the rolled pellet "explodes" into a long leaf upon being steeped in hot water. Rolling renders the leaves less susceptible to physical damage during packaging and storage, and allows them to retain more of their flavor and aroma. The typical gunpowder form is created by wetting the leaves a few times during the short roasting period, which slows down the drying process and results in a curling of the leaves. The best-known green tea from the Anhui Province of China grown 6000 feet above sea level with leaves which are rolled into tight pellets. Please also note that intensive tea growing is not widely used in China and therefore they are producing this on just four harvests per year, unlike the 8 to 10 harvests that is common to find in Africa, India etc. To make this tea each silvery green tea is withered, fired and then rolled into a tiny ball, a technique perfected over centuries to preserve freshness. It was later introduced to Algeria by the great Saharan dynasty of the Ouled Sidi Cheikh, who adapted it from the Moroccans and Algerians as a luxurious beverage. The tea leaves are hand-rolled into small pellets that resemble gunpowder, giving the tea its unique name.
